Protein-Rich Hummus Dip

The Middle East is famous for some of the scrumptious dishes like Pita Breads, Shavarmas, Kebabs, and Tikkas. A favorite accompaniment with all of this is the Hummus Dip. This dip is chickpeas and tahini put together. Find the ingredients needed and the recipe below.

Ingredients:
A Cup of White Sesame Seeds.
A Cup of White Chickpeas soaked in water overnight.
2-3 cloves of garlic.
2 Tablespoons of sesame oil or virgin olive oil.
A Tablespoon of lemon juice.
1/4 Tablespoon of lemon zest.
Salt to taste.
Thyme Leaves for seasoning.
How to prepare:
Keep the chickpeas soaked in plain water overnight. This will give a smoother consistency to the dip.
Take the white sesame seeds and roast it in a pan. Be sure to roast it till it gets brown. Beware of roasting. Sesame seeds burn quickly.
Keep the roasted sesame seeds aside and let them cool. Then take them in a processor jar and grind into a fine powder.
Add a tablespoon of sesame oil or olive oil to it. Process it once again for 2-3 minutes. Stop the jar and scrape the corners. Re-run the processor once again for 30-45 seconds. This is your Tahini ready to be used.
Boil the chickpeas and let them dry. Once they dry, remove the shells from them and used the shelled boiled chickpeas.
Run these shelled boiled dried chickpeas in the processor for 2-3 minutes. Add 4-5 Tablespoons to get the consistency of a dip. Make a smooth paste of chickpeas.
Once the chickpeas are done smoothly, in the processor jar, add 3 tablespoons of tahini, garlic, a pinch of salt, lemon juice, and lemon zest to it. Run these in the processor for good 3-4 minutes till you get the desired consistency.
Add water if you find it thick. Post adding water, run it again for 2-3 minutes. Your hummus is ready to be served.
Pour the hummus in a bowl. Top it with a dash of sesame oil and garnish it with some dried thyme leaves.
Serving suggestions: Hummus is served with kebabs, tikkas, in tacos, or with the falafels. Best combination is to spread it over pita bread, put in some salad of my choice and roll it like a taco.
