Vada Pav Red Chutney

Having stayed in Mumbai for two years, I was overwhelmed with the number of street foods that the city has to offer. One of the most famous, affordable, tasty and filling street food which I am sure most of you would have heard about it the Vada Pav. Vada Pav is a potato patties served in a bread bun topped with a red colored powder called as chutney. This chutney is the actual essence of the Vada pav and the Vada pav without chutney is as bland as tea without sugar. So I was excited to explore its recipe. Here it is for you all to try.

Ingredients:
Half cup of dry grated coconut.
Half cup of peanuts.
15-20 garlic bulbs - unpeeled.
15-20 dry red chillies.
Salt to taste.
Red chilly powder for color.
How to prepare:
Take a pan and put in the unpeeled garlic bulbs. Dry roast it for 2-3 minutes. Roast it only until the moisture escapes. Make sure it does not change the color. Take it on a plate and let it cool down.
Next, put in the dry red chillies. Dry roast them similarly. Take them out and let it cool down too.
Once done, put the peanuts in the pan and dry roast them. When done, take it out and let it cool down.
Last, put the dry grated coconuts and dry roast them. Let them also cool down when done.
Now, in the mixer grinder, coarsely grind the peanuts. Take it out in a bowl. Then coarsely grind the grated coconut and put it in the same bowl. Next, take the chillies and the garlic together and coarsely grind them too. Add them to the bowl.
Now, mix all the ingredients together and add salt to taste and red chilly powder to color.

Make this chutney and store it in air tight container. This can be kept for months. You can enjoy it in sandwich, salads, or tea time snacks. Try it and let me know.
