Ingredients:
2-3 Ripe Bananas.
Half cup jaggery powder.
Half cup Ghee/ Oil/ Unsalted Butter.
1/4th teaspoon each of cinnamon powder, nutmeg powder, and vanilla powder.
A Teaspoon of Vanilla Extract.
Half Teaspoon of Baking Soda.
1 1/2 Teaspoon of Baking Powder.
1 1/2 cups of whole wheat flour.
1/4th cup of sunflower seeds.
Half cup chopped walnuts.
Pinch of salt.
How to prepare:
First, take the ripe bananas, peel it off and mash them well in a bowl. You can use a blender too to make sure no banana threads are left.
Once mashed well, add in the entire jaggery powder into it and mix both well.
To this mix, add the half cup of ghee/ butter/ or oil whatever available and suitable to your taste.
Mix all of these well to make a banana puree. To this puree, add in all the flavour powders like cinnamon, nutmeg and vanilla.
Churn them well for 2-3 minutes and you shall be able to get the aroma of the flavours.
To this mix, now add the vanilla extract, baking powder and baking soda as per the measurements mentioned.
Churn this mix well and leave it aside for 4-5 minutes to let the baking powder and soda react.
Once they are done, take this puree and sieve the entire wheat flour into it. Now is the time to go easy on folding. Put the pinch of salt and keep on with light folding.
Go light hands-on folding the batter. Pour the sunflower seeds into it to bring the crunchiness. If you are baking it for kids, you can as well add some choco chips and chopped walnuts.
Now the batter is ready for baking. Take a baking pan, grease it with butter or oil, sprinkle in some wheat flour onto it. Or else you can simply place a butter paper.
Pre-heat the oven at 180 degrees. Pour the batter into the baking pan and keep in the convection mode for 20-30 minutes.
Once done, take the baking pan out and insert a toothpick in it to check the readiness of the bread. If the toothpick comes out clean, means it is ready. Or else run it in the oven for another 10-20 minutes and it should be fine.
You can serve this banana bread along with warm milk or some tea. This makes for a good snack in the mid-evening. People suffering from diabetes, who usually get pangs to eat sweet, this bread comes as a saviour for them. Bake and Enjoy!
Happy Bread-ing!!!
